What Is Authentic Valencian Paella?
Authentic Valencian paella is not simply “rice with seafood.” In fact, the original version comes from the inland fields around Valencia, Spain, where farmers cooked a hearty meal over an open fire using local ingredients. The result is a dish that is rustic, balanced, and deeply tied to place.
The foundation of true Valencian paella is short-grain rice, usually a Spanish variety such as Bomba or Senia. These grains absorb broth well while staying firm. The rice is cooked in a wide, shallow pan called a paella, which helps create an even layer and encourages the prized crispy bottom known as socarrat.
Traditional ingredients are simple but specific. While recipes vary slightly by town and family, authentic Valencian paella typically includes:
- Chicken and rabbit
- Flat green beans, often called bajoqueta
- Lima or butter beans, known as garrofó
- Tomato, olive oil, saffron, and sweet paprika
- Water or broth, seasoned carefully
- Sometimes snails, depending on the region and cook
What makes the dish authentic is not only the ingredient list but also the method. The meat is browned first, vegetables are added, and the rice is cooked without stirring once it is spread in the pan. This allows the grains to absorb flavor while keeping the texture distinct.
Seafood paella, mixed paella, and modern restaurant versions can be delicious, but they are not the original Valencian style. Authentic Valencian paella celebrates local agriculture, careful cooking, and the flavor of a few well-chosen ingredients.
