How Long Does Paella Take to Cook?

Paella is one of those dishes that feels special, but it does not have to be complicated. In most home kitchens, paella takes about 45 to 60 minutes from start to finish. The exact time depends on your ingredients, the size of your pan, and whether you are using chicken, seafood, vegetables, or a mix.

The cooking process usually starts with a flavorful base. You sauté aromatics like onion, garlic, tomato, and peppers, then add rice, broth, seasonings, and proteins. Once the liquid goes in, paella should mostly be left alone. Unlike risotto, paella is not stirred constantly. This helps the rice cook evenly and encourages the crispy bottom layer, called socarrat, to form.

  • Prep time: 10 to 20 minutes for chopping ingredients and measuring rice, broth, and spices.
  • Sauté time: 10 to 15 minutes to build flavor and partially cook meat or vegetables.
  • Rice cooking time: 18 to 25 minutes, depending on the rice and heat level.
  • Resting time: 5 to 10 minutes before serving so the rice can finish absorbing moisture.

Seafood paella may cook a little faster because shrimp, mussels, and clams need only a short time over heat. Chicken or mixed paella may take longer because the meat needs to cook through before the rice is finished.

For the best results, use short-grain rice, a wide pan, and steady heat. When the rice is tender and the liquid has been absorbed, your paella is ready to rest and serve.
